This date slice recipe is one of those melt and bake whip-ups. It’s simple, uses one bowl for mixing and is pretty quick too.
The slice itself actually tastes a little like butterscotch and has a crispy outer layer like a biscuit. Divine!! The only problem with this slice is that it just doesn’t last long enough – only because it’s usually eaten before it even has a chance to cool!
Great for morning tea or for school lunchboxes. Enjoy….
Easy Date Slice Recipe
200g brown sugar
150g chopped dates
300g Self Raising flour
2 eggs lightly beaten
1 teaspoon vanilla essence
1. Preheat oven 180°C
2. In a pot melt butter over medium heat, add sugar and mix well.
3. Remove from heat and mix in flour, dates, vanilla and eggs. Mix well.
4. Pour into flat slice tin and spread to edges (it is a pretty sticky mix so just do the best you can) and bake for approx 40 mins or until deep brown and slice pulls from sides of tin.
Cook until a nice deep brown and it comes away from sides of tin
